Like so many home cooks, I own fifty to one hundred cookbooks。 I have often purchased them based on a “YouTube” video or cooking show, only to discover I would be in speciality stores buying expensive ingredients and in the kitchen for hours to re-create a single recipe。 Yet other books I’ve purchased, like the cookbook from “La Bonne Souppe” In New York City, are tattered and splashed from overuse。 Therefore, I have learned to trust restaurant chefs who write cookbooks。 These chefs are behind t Like so many home cooks, I own fifty to one hundred cookbooks。 I have often purchased them based on a “YouTube” video or cooking show, only to discover I would be in speciality stores buying expensive ingredients and in the kitchen for hours to re-create a single recipe。 Yet other books I’ve purchased, like the cookbook from “La Bonne Souppe” In New York City, are tattered and splashed from overuse。 Therefore, I have learned to trust restaurant chefs who write cookbooks。 These chefs are behind the grills and stoves night after night, turning out delicious meals quickly。I was excited to learn that the chef of the “Tara Kitchen” restaurants, Aneesa Waheed, had written a cookbook。 Tara Kitchen concentrates on Moroccan cuisine and the food is consistently delicious and interesting。But could I cook it in my own kitchen? Thanks to this new, comprehensive cookbook, the answer is yes! I learned that I can use canned and frozen vegetables in my dishes。 No more languishing ingredients in the fridge; a real money-saver。 Chef Waheed tells the reader how to make exotic-sounding Moroccan staples like preserved lemons, harissa, and ras el hanout, from ingredients readily found in grocery stores。 She also devotes sections to substitutions, measurement conversions, and all the spices you will need。 My favorite section is called “Saving Time”, because we all love to get a delicious meal on the table quickly。 I learned that I already own all the equipment necessary to make delicious Moroccan food。And the food tastes great。 The recipes are so easy to follow and replicate that you can’t make mistakes。 There are many vegetarian recipes for those who follow that way of eating。The cookbook is a love story about Chef Waheed and her husband, Morocco, and the art of cooking with passion。 I highly recommend this superb book。 Thank you to Callisto Publishing for my free advance copy。 。。。more

A great little cookbook to expand your repertoire of Mediterranean recipes。 Unlike other countries, Morocco has some kick and heat in their food so if you are finding your healthy diet a little boring this is the perfect book to pick up and enjoy。
